QUASI-CUBANO BLACK BEANS & YELLOW RICE

Hello omnivores, herbivores, and carnivores! Today, I present...dinner on the quick!

Fast, nutritious, and easily modified.

You will need:

one 15 0z. can black beans (frijoles negros)
one small package Vigo (brand) yellow rice
one large banana, preferably overripe, sliced
1/4 cup chopped onion, preferably purple
2 tablespoons oil
1/4 teaspoon cinnamon

Tip: The riper the banana, the less cooking time it will need.

Make rice in sauce pan, according to directions on label. Rinse and drain black beans thoroughly. Heat saute pan and add oil. When oil is hot, add onion and cinnamon. Cook until onion is almost transparent. Add black beans and cook until heated through. Add bananas and cook until soft and warm. Serve beans over rice.

Yummy variations:

1) Use orange juice instead of oil for sauteeing onions (4 tablespoons orange juice).

2) Toast cinnamon first by heating saute pan, over high heat, and adding cinnamon. Cook until fragrant; approx. 15 seconds. Now add oil, or juice, and onion. Garnish with chopped green onions. Garnish with sour cream, chicken, tomatoes, coconut, beef, pork, or grated cheese.
